I have just started using one and I really enjoy it. I have made a couple of desserts and they turned out pretty good. I was wondering if anyone had any goods recipes they wanted to share.

Jambalaya just isn't jambalaya without a cast iron dutch oven.

I probably make mine different every time, I hate going by recipes. Something like:

3 stalks celery, sliced into 1/4" thick pieces
1 onion, sliced
1 bell pepper, sliced
4 cloves garlic, minced
2 big links andouille (or italian) sausage
2 chicken breast sides
half can diced tomatoes, drained
2 tablespoons olive oil
tony chachere's cajun seasoning
2 cups cooked basmati or long grain brown rice

Grill the chicken and sausage and cook some rice separately. Sautee' the veggies in the olive oil in the dutch oven, adding celery first, then bell pepper, then onion. Cube up the chicken, slice up the sausage into 1/8" slices, and add these along with the tomatoes and garlic at this point. Add cajun seasoning to taste. Add the rice to the dutch oven and mix up nice and fluffy. Serve on a plate and drown it with Tabasco. :D

Purists will cook everything all together, but I don't like my rice to absorb some of the other stuff going on, and I don't like a bunch of grease for the meat getting onto everything else.
