Take a dried bag of black eyed peas and bring them to a rapid boil, after boiling for a few minutes back off to a simmer and add two diced yellow onions, separately make some rice (I like about 3 cups of Basmati), drain the peas and add back to the pot, add Tony Chachere's high sodium content cajun salt (:D) to the peas to taste, mix the rice and peas together after everything is done. Some people like to add red peppers at this point. I like to add a whole crapload of Tabasco chipotle sauce. Mmmm boy. :cool:

For the same reason that rice, andouille sausage, chicken, bell pepper, celery, rice, garlic, and onion is called "jambalaya". Somebody else just made up the name, I don't know why. It's a pretty common recipe, with small variations.

HEY how about adding in some Vadal O to it ? That should help it along. :D

thats what I was lookin for, with all the peas probably should be called,"POPPIN JOHNS":D:rolleyes:
