I plan on trying them as a food crop for not just doves, but other animals. A friend in far, far western KY said they are the deer's favorites. They'll eat all the new leaves and buds until just a field of sunflower stalks remain. Has anyone had such an exprience?

If you are growing them in an attempt for making a dove field they will eat everyone of them!;)

Year 1: 6 acres of sunflowers planted, 5 excellent dove shoots that fall.
Year 2: 10 acres of sunflowers planted, 10 acres of bare, headless stalks by August, no doves, lots of overweight deer
The deer will even wait long enough to sucker you into top-dressing the sunflowers, then will move in and eat each and every bud just before it opens.
