Does anyone know how to cook a Phesant?

I soak mine over night in Buttermilk. Rinse then stuff them with cooked Wild Rice, cover with slices of Bacon and bake for about 45 min at 350 degrees.
I also prepare them the same way , but use a smoker for the cooking process. That takes about 1.5 hrs at 275 degrees. I put a pan of water in the bottom of the smoker to help keep the meat moist and to aid in the cooking process.
My oven / cooker temps might be different from yours though. Hope they turn out good. I love them cooked this way.

Debone the breast, dredge in flour, egg wash and flour again. Fry in a mix of butter and olive oil until just about done, and remove.
Add minced onions or shallots and garlic to the oil, saute until the onions get clear. Add thyme, basil, salt and pepper, capers, lemon juice and white wine, and cook this down until it gets thick. Add the breasts back to reheat a couple of minutes.
Serve the breasts with the sauce poured over top. It's great with mashed potatoes and braised brussels sprouts.

Thanks for the response guys. We will give them a try. Our church is having a wild game supper for a fundraiser this fall & we had some phesants donated.

Try some Pheasant and Dumplings...I just use the recipe off of a box of Bisquick. It's very easy and VERY tasty and will feed a lot of people for an event like you're describing.
