Don't reckon I've ever had a bad piece of fish that was fixed properly!

Crappie and Bluegill are my favorites.

Walleye is great, so is catfish.

Ever try fresh blacken Alaskian Halibut???? (It'll make you smack your Granny)

Straight out of the creek trout? Gutted, rip out gills, wrapped in foil, butter and lemon on driftwood coals????

Crawdads, fresh caught, thrown into a 5# boiling coffee can of salt water on a creek bank? Boiled until they turn red and float, pull off tails and hull out, dip in melted butter.

Pickeled carp!:eek: Don't knock it until you try it!! Cut off the large chunks of carp, cold pack in Mason jars with pickling spices, vinegar disolves small bones. Make corn meal / egg / seasonings (same as salmon patties) and fry.

Someday I need to try catfish. No one in the family has ever fished them, so never really had the opportunity to give them a try, and if I order fish when I'm out to eat it is usually walleye or trout.

If a restaurant serves fish in Kentucky, catfish is usually among those on the menu. I grew up in MN and the thought of eating a catfish was far from the norm. I remember the first time I ate it. My uncle showed up at the cabin (in northern MN) with a 12 pack cooler full of cubed catfish marinating in lemon juice, we fried it up and couldn't believe how tasty it was.

I know it's on some menus around here, just hard to order something that I haven't had before, especially with prices nowadays. Better off ordering something I know I'll eat.

I'll try to get that. I didn't make it, my cousin did. I know he took the large cuts off the fish, put them in a Mason jar an "cold packed" them. When you used then, the small bones had disolved. You mixed it up and made patties the same as if you were using salmon.

Not that you can catch any of these around here, but tilapia, dolphin, and swordfish are my favorites to eat.

Tilapia is great in a soup, just take cream of mushroom soup and pour in some corn, grilled red peppers, and 1" chunks of uncooked fish then simmer it until the fish turns white and flaky.

Mentioning dolphin always freaks people out, they think of Flipper, not dolphin fish. I grilled up some on a fire once, pretty tasty. They are way fun to catch, they put the local fish to shame.

I got hooked on swordfish in college. The local Wal-Mart had trouble selling it, so like a day before it expired they put it on clearance, which happened all the time. So me and my wife would run and pick some up, we could get two big swordfish steaks for less than $2 for both and would run home and grill them with some carribbean jerk seasoning. I'd tell people that we ate that alot and they're thinking that we spend all kinds of money eating it, but the funny part was that you couldn't even eat at McDonald's for that kind of money, it was on the same level as Ramen Noodles.
