Anybody know where I can find detailed info on how to do this myself?

That is very unique and I'm interested in that info as well. I have cut the wings at the farthest joint and boraxed them and they look like the wingtips pointing down. I'm interested in knowing how they attached the whole thing from behind and how did they preserve the feet?

That's what I'm trying to figure out. Do you flesh the wings or leave the bone in? Is there a third plate behind the wings, etc..

I did one a couple years ago similar to that for a customer, but instead of a fan i put the wings behind a half mount. I left the bones in the wings but make sure to get all the meat out. Then pin the wings on cardboard and borax the craap out of them. I used a thin piece of plywood and hot glued the back of the wings to the plywood. It is kinda a pain in the butt.

The guy I go to puts the tail, beard, feet/spurs, and the shell on the plaque for me. I'll try to get a pic up of the ones I have. Looked into the wings/tail/beard from another guy and it was $175.
