Does anyone have a simple venison jerky recipe using venison burger that you don't have to marinate for 24 hours? I'm getting ready to head out on a fishin trip... wanted to make up a bunch of jerky to take along for my partners to eat on while we're there, but I wanted to be able to make it as quickly as possible since I don't have alot of time to get it done. (probably going to try and make as much jerky as possible in the span of two days using 10-15 pounds of ground venison) Any suggestions would be much appreciated!

I love to make jerky with ground venison. I don't know how you are drying your jerky, but I use the round food dehydraters with the stackable trays. I use Dale's liquid seasoning, liquid smoke, a little brown sugar,black pepper, soy sauce.etc.. I mix it all in a bowl with my hands like I am making meatloaf. It is always nice to marinade, but I have mixed and made the same day, not much difference.

i have never marinated meat for 24 hours......usually an hour or so does the trick for me.....i use 1/2 cup whats this here sauce(lol....say it real fast and you'll know), 1/2cup teriyaki sauce, 1/2 cup soy sauce, 2 tsp liquid smoke, 2 tsp garlic salt, black pepper (as much as you like).....an hour or so in the meat does good......adjust recipe according to amount of meat you have......all this jerky talk is making me hungry, glad i still have a bag in the freezer

for making it faster get the powder mix....grind your meat, add the seasoning, mix and dehydrate

I know this is kind of a stale topic, but here is my 2 cents.

1 bottle Dales Seasoning
1 10 oz bottle Worcestershire Sauce
Pepper to taste

Let set for 2 hours with meat in airtight container in fridge. Drain the juice and you are ready to go.

This is how I make all of my solid strip jerky before I go into the woods for a few days. I let my solid/strip jerky set in the juice for at least 36 hours before drying, but ground jerky doesn't take as long.

There is enough salt in the Dales to preserve it for at least 2 weeks in open air conditions. That's just siting on the counter in a cookie jar container. Lasts a lot longer if refrigerated or frozen.
