is it necessary to add beef fat to the deer meat to make burger

In my opinion the answer is yes, if you want to make "deerburgers". I mix mine 70/30 ground twice. In my expereience any less than 30% and the fat cooks out and the burgers fall apart.

If you want ground burger for chilli or pasta sauce you do not need to add the fat.

I don't add any fat to my meat when I'm grinding it. You never know how much really lean meat you're going to need. You can always combine a little bit of hamburger with the meat later on.

Just got done eating some taco salad that I made with straight ground deer meat. Talk about good!!!!!

HUMMMMMM.... may have to try the Toco salad thing... and that meatloaf recipie on here is some serious kick butt stuff... 100% deer and 2 eggs to hold it together... Still gotta try the BambiBergers though

Put bacon in it, but not chopped too fine. That helps hold it together and makes it much less gamey.

When I had my deer processed this year something different was used in my burger. Pork trimmings. It is by far the best "deer burger" I have had. I can hardly wait for black powder season.

I have found the best deer burger is to debone it yourself the fresher the better. Take it up to a butcher and have them grind it right there on the spot. Don't let them process it just have them grind it. NO FAT.

If you handled the deer right (and you know you did) then you will have the best ground deer. It makes great chili and meatloaf etc. You wanna hamburger well buy a lil and mix it in thats plenty of fat. But in my opinion deer makes a better meat loaf and chili with out the fat.

We have always used pork shoulder, about 70/30. beef fat is too greasy and not as healthy. The best tip is to put through the grinder twice.

you can also put in plain deer burger 1 pack of lipton onion soup mix and 1 cup or 11/2 cup of quaker oatmeal salt pepper a dash of garlic powder it helps hold it together and man you talk about good

I do as posted above, De-Bone the meat and have it ground. The cost is minimal and worth not having the mess or expensive equiptment to do it with.

That being said all my Ground venison is just that, 100% ground venison. Season your "burgers" well and cook over low to medium charcoals, and don't overcook and they won't be dry I promise! Best Meatloaf, Tacos, Taco Salad, Spaghetti, Lasagna, etc I've ever had.

well, i've found that grinding it myself is much better. if i need to add any fat, i'll throw a little bacon grease in it.
also, i dont use the onion soup mix anymore. that stuff makes the house smell like "body funk"![xx(]

Well when I stated that my deerburger is the best that I have had, well that is still true to this day.Best ever in my years of hunting. The thing that gets me is my friend cooked some of his burger a couple days ago for us, made up the same way as mine and his was not near as good as mine. Both were bucks, same farm, processed 1 week apart the exact same way by the exact same folks. His deer seemed to be more in rut than mine when we took him out of the field, and I wonder if that is the difference? It had a definite gamie (sp) taste to it.I dont get it.?????

I have had the similar problem with other friends giving me some of their venison foods and sometimes getting a stronger gamey taste. When I started hunting a handful of years ago, I was talking to my processor and he told me that the lack of quality handling of the meat after the kill will make the venison vary more than anything. He told me to ALWAYS ice down the insides ASAP (because we rarely have sustained cold temperatures) and washing the deer's cavity out and keeping it clean matters. I do as he instructed and have never had bad tasting venison.

and if you really wanted a good burger shread the meat from a roast and add your favorite barbeque saucesss and put it on a bun it takes a little while but its delcious (you can use beef too if you want to get greedy with your deer meat[:D]like ...me...this guy I know)

I prefer my deer meat with nothing but deer meat. If I wanted beef or peork, thats what I'd buy(it's much cheaper than venison in the long run!).

I have used a dry french onion soup mix packet (one packet per one pound of ground deer meat) and this tastes really well. I also just recently had my first deer burger with pork fat in it and the two above, in my opinion taste much better than beef fat.

cut them tarsal glands off! i still do this but dont know of anyone who does anymore

Raktrakr,good advice on cutting off the tarsal glands.I may be going overboard but I use a seperate knife just for the glands,then another knife for gutting and skinning.Don`t want any tarsal smell on the meat. Sometimes I will add a small amount of quality pork sausage to deer burger for a different taste.

ok i just got done grinding some burger from saturday's doe....i added bacon to it....we'll see how that does
