Of course, the first question that comes to my mind is where do you come up with the poult skins?

He might have found them dead or something. Maybe they were domesticated, etc. etc.

That's sort of what I was figuring. I was wondering it domesticated poults looked the same as wild ones? I would doubt it, but I can't say for sure. It's a great mount, that's for sure...

They are wild birds. My understanding is that the hen fell victim to a predator, and the chicks were unable to survive. That's why the hen is situated like she is. Ernie Akin did one called "28th Day" that had the chicks emerging from eggs, and in that case it was a bush hog incident to the chicks, and he added a hen that was later taken during a fall season.

The first question my wife asked when we saw this mount was "Did he have to kill the babies?" Me being the smartass that I am answered "No, but training em to sand that still is quite impressive!" I figured they were either bushhog babies or pen raised wild turkeys.

Ha, good one Skin!
Imagine the patience that it takes to do that fine work. No way I could, I can't even imagine how they skin a deer's head (nose, eye lids, lips, ears) let alone turkey poults without destroying them. It would drive me crazy. Needless to say, I'm thankful that there are those that can so we can admire such fine mounts.
