Frankfort, KY, (November 4, 2004) - Just in time for the Kentucky modern
gun deer season, the Kentucky Afield outdoor show will air a special segment
this Saturday night for deer hunters interested in learning to process their
harvested animals at home.
Host Tim Farmer and special guest Sim Harp will describe and
demonstrate how to transform a field-dressed deer into steaks, tenderloins,
roasts and burger in minutes, utilizing all the meat available from a
harvested whitetail.
"I think deer hunters are going to want set their VCRs and record
this show," said Farmer, "so they can refer back to it when they need it."
"Sim has processed deer for years and makes it so easy to learn.
He'll take us step-by-step through the process, identifying what the
different cuts of meat are, where they come from, and how to remove them
from the bone quickly and easily."
"He'll also demonstrate how to butterfly steaks, explain what is
needed to prepare and package the meat for the freezer, and show us how to
get the most out of our harvest," said Farmer.
"It's something any hunter interested in processing his or her own
deer can do at home with a little expert instruction, " he said.
"The best part is that it's surprisingly inexpensive to do," Farmer
added, "and it doesn't take a whole lot of time once you learn how."
Kentucky Afield airs on Kentucky Educational Television (KET)
stations at 8 p.m. Eastern on Saturday, and repeats on Sunday at 4:30. The
deer processing show is scheduled to air Saturday, November 6. Kentucky
Afield is a co-production of the Kentucky Department of Fish and Wildlife
Resources (KDFWR) and KET.

That is great! I think that folks that take care of their own game....are really IN the game. Plus, if you are taking 3,4, or more deer, you save enough $$ for that rifle or the next mount.

Any chance they are selling that program on CD.

I like getting the KY afeild magazine. Don't get to watch live TV much but would be willing to pay a bigger subscription if I could get the KY afeild programs on DVD.

I've "processed" my deer at home for years but I'm sure I could learn a thing or two. I just have a hard time with commercial meat processors. I want to be as certain as possible about the handling of the meat I feed my family. If I kill it, I gut it, I quarter it etc., get it cooled (in ice chests) within hours of the kill, then bone it out, slice or grind it, and freeze or cook it within another week, I'm a lot more confident in feeding it to the family. I'm sure its handled better than anything at the grocery or a restaurant. I also prefer deer meat that hasn't been subject to a bone saw but instead just boned out prior to processing.

I won't be able to watch it as I have to go to Fort Knoxx tomorrow and won't be back until Sunday. If there is someone that would tape it for me I would be willing to pay for it.

Dangit I missed it too. Even forgot to tape it... grrrrr.

Been cutting up my own for 25 years but I could always use some tips if they had them.

I did get to see it. They made it look easy. Ive have never tried it but may do so now. Thats a great show, getting to see hunting in our own area. I did tape it for reference and broke the tab off the tape so the old-lady wouldnt tape over it.

If someone has a copy of the show, I would love to have a copy. I have been wanting to do m own process for years, but never had the info on how to do so. I should would love to have a copy of the show.

It was a decent show, but it was only a 10 to 15 minute segment and only showed the basics.

I think they would do well with an entire show on how to care for the animal after the shot, skin the carcass and remove all the connective tissue from the meat as well. They just showed the basic cuts to get the large muscle groups off the carcass and how to butterfly your steaks after they had already been seperated and cleaned up.

Cleaning the meat up to get to the steaking process takes more time than anything else.

Just called and ordered mine the lady that is dubbing the show onto video tape actually. She said it would be in the mail tommorrow. No charge ! As of yet so better get yours now!
